Kuey Teow, also known as Char Kuey Teow when stir-fried, is a popular noodle dish originating from Southeast Asia, particularly Malaysia and Singapore. It is made with flat rice noodles, often stir-fried with ingredients such as prawns, egg, Chinese sausage, bean sprouts, and chives in a flavorful sauce. The dish is typically cooked over high heat to give it a distinct smoky flavor, known as "wok hei".
