Firstly, the paste recipe starts by heating your wok and adding half a ladle of oil over medium-high heat. Make sure the oil is heated before adding the items to the wok. You can test this by sprinkling some water using your hands into the oil, if the oil is hot enough, it should start to sizzle quite loudly. Then, add some freshly chopped lemongrass, sliced holland onions, and garlic. Proceed to stir-fry everything until the kitchen is filled with the seductive scent and aroma of the ingredients. Be careful and pay close attention to avoid the ingredients from burning as you mix and toss the items until a balance of flavor and smell has been reached.
